I’ll drag a couple of images into my Convert to B&W folder and watch what happens. Copies are created in the Converted folder and, sure enough, they’re in black and white.

Convert image to high-contrast black-and-white in Photoshop Black and white images do not have to be dull and lifeless. There are no colors but they can still look sharp and smooth.
