In a wok or a large 10- or 12-inch skillet, heat 2 tablespoons of canola, vegetable or peanut oil over high heat. Add 1 cup of diced onion and 1 cup of chopped red peppers or another vegetable.
Fried rice can be served on its own or as part of a Chinese meal. I like to use a 14-inch flat-bottomed wok, which allows the ingredients to heat up quickly and evenly without overcooking.
Add rice and onions; mix together. Add bacon and leftover meat. Mix. Add soy sauce until the rice is as brown as you like it. Stir well and cook on low heat for 15 to 20 minutes.
Add the rice and scallions; stir-fry for 2 minutes, breaking up the rice with a spatula until the rice is heated through. Season with the salt and white pepper.
